Maple Citrus Roasted Carrots by Eileen Magalianes

This maple citrus roasted carrots recipe is a hearty, savory vegan dish with a kick of citrus! Easy to make, it only requires a short time of preparation and baking. This recipe is by Eileen Magalianes, a loyal member of Kahumana Organic Farms Community Supported Agriculture (CSA) Program. Eileen once owned a bake shop, but now bakes for fun, for friends, and for family.

She shared this recipe on a special Facebook group dedicated just to Kahumana’s CSA members – a testament to how much the program has grown. Before COVID hit in March, Kahumana’s CSA program had around 10 members. Over 6 months later, the program has served over 5,000 orders to approximately 1,000 individuals and families – making for a conservative estimate of 20,000 meals served so far. 

The program continues to grow and flourish, as with many other CSA programs on the islands that various farms and food hubs have established in 2020. CSA programs are an efficient way to safely provide fresh food to people and more importantly, to connect people with the farmers nearest to them. Eileen’s Maple Citrus Roasted Carrots

Ingredients:

  • Carrots (quantity based on preference)
  • 1 Sweet Maui Onion
  • 1 Lemon
  • Potatoes (quantity based on preference)
  • Orange, tangerine, or whatever your preferred citrus is
  • Extra Virgin Olive Oil
  • Maple Syrup
  • Salt
  • Black Pepper
  • Sesame Seeds
  • Green Onions

Preparation Instructions:

  • Preheat oven to 425°.
  • Cut half of the Sweet Maui Onion into wedges. Slice one half of the lemon and soak the Sweet Maui Onions in the lemon juice, salt and pepper to taste, for 5-10 minutes.
  • Slice up the other half of lemon.
  • Slice carrots in halves or quarters depending on your preferred size.
  • Chop the potatoes.
  • Zest an orange, or a tangerine (whatever your preferred citrus is), then slice it.
  • Arrange your carrots, potatoes, citrus slices, lemon slices and onions (minus the lemon juice) on a baking pan lined with parchment paper.
  • Squeeze the juice of half an orange or a tangerine over the vegetables.
  • Drizzle extra virgin olive oil and 100% maple syrup over everything.
  • Sprinkle on orange zest and a bit of salt and fresh ground black pepper to taste.
  • Bake for 25-30 minutes.
  • Sprinkle sesame seeds and fresh green onions when done roasting, and any other garnishes you like.
